A HUGE bonfire will light up the skyline at Hollydene Estate later this month to celebrate the changing of the seasons.

And, it also gives Upper Hunter residents an opportunity to enjoy a feast with fun company, fantastic wine and fabulous food.
For Hollydene Estate, it’s a case of out with the old and in with the new as the Burning of the Canes on Saturday, August 30, marks the end of pruning – and winter.
“The event signifies the beginning of spring, the subsequent bud burst of the vines and a fresh lifecycle for the vineyard,” Trudy Merta said.
“Fire will feature prominently during the evening, which begins at 6pm, with the Phantasia Fire Twirlers from Newcastle.
“The bonfire will be lit and then a typically outstanding, mouth-watering menu from Vines Restaurant will follow.”
Mrs Merta said all taste buds would be tantalised.
“The menu includes char-grilled eggplant with thyme and marinated feta as well as beef eye fillet with wild mushroom fricassee and crispy kumara chips,” she said.
“We also have jumbo pacific scallops with vanilla pea puree or veal back strap with herb potato croquettes.
“For dessert, Hollydene’s Verdelho liqueur is combined with mango creme brûlée biscotti and berry compote – a divine merger.
“The night will also feature musical entertainment from guitarist John Larder, the first of many musicians to grace Hollydene in times to come.”
Seats are limited to 100, making it imperative to book as soon as possible.
